EASY Gluten-Free Oatmeal Banana Pancakes
Banana pancakes for breakfast!
This recipe has been adjusted many times, so feel free to be adventurous with it and make it your own. It's a super quick, gluten-free pancake recipe made in a small blender or grinder. Children love them. Adults love them. They really bring everyone together.
Ingredients:
1/2 cup oats (certified gluten-free if necessary)
half a ripe banana
1 egg + 1 egg white
1 tsp. cinnamon
1/2 tsp. vanilla
1/4 tsp. sea salt
1 tbs. coconut oil
You can sneak in a handful of ground-up spinach as a fun (and colorful) bonus. If you're wanting a thicker batter, you can add 1 tbsp. grass-fed gelatin.
Directions:
1. Grind oats in a blender.
2. Add other ingredients to blender to combine.
3. Heat coconut oil in pan over medium heat. Cook as you would regular pancakes.
Serve with Grade B maple syrup (this is my favorite) and grass-fed butter (I love Kerrygold).
